Potato Curry for Navratri
Ingredients (for 4 people)
- 4 medium boiled potatoes
- 2 green chill - fine chopped
- 2-3 crushed tomatoes
- Rock salt taste
- 2 tsp coriander
- ¼ teaspoon red chili powder
- ½ tsp coriander powder
- 2 tsp ghee
Method
- Cut the boiled potatoes into small pieces, and grind the tomatoes in a grinder.
- Heat the ghee in a pan, when oil is hot add the chopped green chili , then mix the tomato paste.
- Add the Coriander powder, red chili powder and rock salt and cook on low flame till all the water of tomato dries.
- When able to see the ghee over the past then add the chopped potatoes and the fry for two more minutes.
- Add a glass of water and cook on low heat until the curry slightly thickened.
- Turn off the gas apply the coriander leave dressing and serve with Singadhe or Kuttu puri.
