Basundi
Ingredients (for 4 servings)
- 2 ltrs full cream milk
- 1 cup sugar
- 1/2 tsp cardamom (elaichi) powder
- 2 spoon chopped almonds and pistachio
- 6-7 strands of saffron
Method (How to make Basundi)
- Bring the milk to a boil in a broad and heavy bottom pan.
- Reduce the flame and cook on a slow flame till the volume is reduced to half, for approximately 1 hour, while stirring occasionally.
- Add the sugar and cook on a slow flame for approximately 30 minutes or till the milk thickens like rabdi.
- Add the cardamom powder and saffron and cook on a slow flame for another 10-15 minutes.
- Garnish with chopped pistachio and almond serve warm or chilled.
