Kele Ke Chilke Ki Sabji

Ingredients

Skins of 5-6 green fresh bananas

1/4 inch piece ginger

1 medium onion Finally chopped

1 tbsp cooking oil

1/2 tsp cumin seeds

A pinch of asafoetida powder

1/4 tsp turmeric powder

1 tsp coriander powder

1/4 tsp chilli powder

1/2 tsp salt to taste

1/2 tsp amchoor or dry mango powder

1/4 tsp Garam Masala

1 tbls fresh coriander leaves

Method

Peel thick stripes of the banana skins lengthways, along the entire length of each banana. Wash well and keep in water for 10 minutes.

Drain the water and chop into small pieces, like green beans.

Now heat the oil in a pan, add cumin seeds and asafoetida powder.

Add Onion and fry till soft add ginger and fry for few seconds.

Add banana skinspeices and stir well now add turmeric, chilli, coriander powder and saltmix well and cover the pan and cook on lower heat.

The skins cook very quicklyso check it between if cooked, add dry mango powder garam masala and mixwell.

Garnish with chopped coriander leaves and serve hot with Rotis or Parathas.
