Gobhi Keema
Ingredients: (for 3-4 servings)
1 medium size cauliflower
3 tbsp ghee,
1 large onion, finely chopped
1tbls ginger, garlic paste
2 large tomatoes, finely chopped
1/2 cup fresh or frozen green peas(boiled)
1/4 tsp turmeric
1/2 “ cinnnamon stick
1 big cardamom
8-10 Pepper corn
5-6 cloves
1 tsp cumin
1 tsp coriander seeds
1 Bay leaf
2 tsp kashmiri Chilli powder
1 tsp garam masala
Salt to taste
2 tbls coriander leaves
Method (How to make gobhi keema)
Roast chinnamon, cardamom, cloves, cumin, coriander, pepper and bay leaf in a pan and grind it to a fine powder.
Clean, wash and grate the cauliflower.
Now heat 2 tbsp Ghee in a wok and saute the cauliflower for around 10 minutes or until it gets light brown.Set aside.
In the same wok add the remaining Ghee and saute the onions, ginger, garlic paste untill onions are soft and slightly browned.
Add the chopped tomatoes cook for around 5-6 minutes or until the tomatoes are soft.
Add the turmeric powder, chilly powder and powder spices and saute for a minute
Add about 1cups of water.
Let it come to a boil cook on medium flame until it comes together into a thick gravy.
Now add the boiled peas and salt and cook for another 5 minutes.
Add the toasted cauliflower, garam masala and combine well.
Close the lid and cook on medium flame for another 5-6 minutes.
Garnish with fresh coriander leaves.
Serve hot with chapati or paratha.
