Mix Vegetable Palak
Ingredients (3-4 servings)

2 cup spinach (boiled)

½ cup carrot (finely chopped)

¼ cup beans (finely chopped)

1 cup cauliflower (chopped)

3 green chillies
-
½ cup onion (finely chopped)

1 tsp ginger (chopped)

1 tsp garlic (chopped)

1 cup tomato (chopped)

½ tsp cumin
-
1 tsp red chilli powder
-
2 tsp garam masala
-
2 tbsp oil
-
Salt as per taste

1 inch cinnamon
-
2 tbsp coriander leaves
Method (How to make mix veg palak)

Make paste of boiled spinach and one green chilli.

Slit remaining chillies.

Half boiled cauliflower, beans and carrot.

Heat 1 tbsp oil in a pan and add cinnamon and ginger and garlic sauté for few seconds.

Add chopped onion and fry till light brown.

Add spinach paste and sauté for 2-3 minutes. Switch off the flame

Heat remaining oil in a pan add cumin seeds sauté for few second, add tomato and salt fry till tomato mashed.

Add boiled vegetables and sauté for 1-2 minutes.

Add red chilli powder and garam masala.

Add cooked palak paste and fresh cream.

Add lemon juice switch off the flame and garnish with coriander leaves.

Serve hot with roti or paratha.
