Whole Wheat Carrot and Walnut Loaf Cake
Ingredients

1 cup whole wheat flour

¾ cup sugar

1 tsp cinnamon powder

1tsp baking soda

¼ tsp salt

½ tsp baking powder

1 ½ cup grated carrot
-
2/3 cup oil
-
2 eggs beaten or 1/3 cup thick yogurt

¼ cup chopped walnuts + 1 tsp maida

¼ cup milk

Preheat the oven to 180-160 degree C.

Grease the loaf pan with oil and line with butter paper.

Sift the flour, salt, cinnamon, baking soda, baking powder in a bowl and keep aside.

In a separate bowl mix the sugar, beaten egg or yogurt, oil and mix well add grated carrot.

Slowly add the flour mixture, stirring until just mixed.

Mix 1 tsp maida into the chopped walnuts and coat it.

Add walnuts into the cake mixture and mix well
-
Transfer the batter into the greased pan and tap gently to remove the airbubbles.

Bake for 30-35 minutes or until tooth pick inserted comes out clean.

Slice the cake and serve.
