Potato Curry for Navratri

Ingredients (for 4 people)

  • 4 medium boiled potatoes
  • 2 green chill - fine chopped
  • 2-3 crushed tomatoes
  • Rock salt taste
  • 2 tsp coriander
  • ¼ teaspoon red chili powder
  • ½ tsp coriander powder
  • 2 tsp ghee

Method

  • Cut the boiled potatoes into small pieces, and grind the tomatoes in a grinder.
  • Heat the ghee in a pan, when oil is hot add the chopped green chili , then mix the tomato paste.
  • Add the Coriander powder, red chili powder and rock salt and cook on low flame till all the water of tomato dries.
  • When able to see the ghee over the past then add the chopped potatoes and the fry for two more minutes.
  • Add a glass of water and cook on low heat until the curry slightly thickened.
  • Turn off the gas apply the coriander leave dressing and serve with Singadhe or Kuttu puri.
