• Rice Basmati 1 cup (soaked)
  • Coconut 1
  • Onion 1 big (peeled and chopped)
  • Garlic 2-3 flakes
  • Ginger ½inch piece
  • Green chillies 2 (Grated)
  • Whole black pepper 7-8
  • Aniseed (Saunf big)1/4tsp
  • Cumin seeds (Jeera)1/2tsp
  • Cardamom (Green) 3
  • Cinnamon Half inch piece
  • Cloves 2
  • Turmeric powder 1/4tsp
  • Cashew nuts 5
  • Raisins 5
  • Butter or Ghee 3tsp

METHOD (How to make coconut rice)

For coconut milk (How to make coconut milk)

  • First cut open the coconut in the middle and drain coconut water in a bowl
  • Remove the coconut from the cell, and grate coconut with grater.
  • Now put the grated coconut in the mixer/blender, add half cup water and blend it like a smooth paste.Now transfer this coconut mixture to a bowl and add 1 ½ cup of warm water and mix it.
  • Now pour the mixture to a strainer and press it with a spoon till all the milk is drained.
  • Now the extracted milk is the coconut milk

For coconut rice

  • Now grind garlic, ginger, aniseed &cumin seeds togather.
  • Heat 1 tsp butter in a pan and fry cashew, raisins and keep aside.
  • Pour reminnig butter in a pressure cookker and heat it, add cardamom, cinnamon stick, cloves and peppers stir for 1min.
  • Add chopped onion and chopped green chillies, fry till onion turn golden.
  • Add ground paste and turmeric powder fry for 1min
  • Add soaked rice, 2 cup of coconut milk, cashew nuts, raisins, salt.
  • Close the lid & pressure cook like normal rice.
  • After cooking open the lid and garnish with coriander leaves and fresh grated coconut serve hot with pickle.
