Saffron Shrikand - Kesariya Shrikhand

Materials (for 4 servings)

 

  • Fresh curd - 500 gm
  • Sugar - 100 g powder
  • Saffron - 10-15 threads
  • Warm milk 1 tbsp
  • Green cardamom powder - 3-4 of Cardamom
  • Pistachios - chopped 5-6
  • Almonds - chopped 5-6

 

Recipe - How to make Shrikhand

 

  • Hang curd in a muslin cloth, until all the water from the curd has drained off. (it will take approximatly 2-3 hrs.)
  • Dissolve saffron in warm milk and keep aside.
  • Cut almonds, pistachios into thin slices.
  • Transfer the hang curd in a bowl add sugar, cardamon powder, saffron milk and half of almonds and pistachios and mix well till sugar dissolved.
  • Shrikhand is ready, keep it in the fridge for two hrs.
  • Garnish with pistachios and almonds and serve chilled. Chef's Tip
