Instant Green Chillies Pickle



200 grams green chillies

3 tsp coriander powder

1 tsp fennel seeds

1 tsp cumin seeds powder

3 tsp dried mango powder

1/2 tsp garam masala

2 tsp sugar

2 tbsp oil

salt to taste


Slit the green chilles lengthwise.

Dry roast corainder, cumin and fennel seeds. Make powder of roasted seeds.

Add all ingredients except chillies and half or the oil in a mixing bowl. Mix well.

Coat the chillies well with the prepared masala mixture.

Heat remaining oil in a pan, add the chillies. and saute for a few seconds.

Add the remaining masala mixture and add 2-3 tsp of water from the sides and cover for a few seconds.

Remove the lid and allow to cool completely.

Serve immediately or store for upto 2 to 3 weeks in the refrigerator.
