Khamman Dhokla

For 4 people


For Dhokla :

  • 1 ½ cups flour
  • 2 tbsp semolina
  • 2 cups water
  • 2 tsp lemon juice
  • Oil 2 tsp
  • Salt to taste
  • Sugar 2 tsp
  • eno fruit salt 1 pkt

For Tempering :

  • Oil 2 tbsp
  • 1 tsp mustard seed
  • 4 green chili long chopped
  • A pinch of asafetida
  • 2 tsp lemon juice
  • Sugar 2 tsp
  • 2 tsp chopped green coriander
  • 6-7 curry leaves


§  Mix gram flour, semolina, Sugar and water in a pot till the sugar dissolve and make sure there should not be any lump.

§  Mix the lemon juice, salt and oil in the mixture.

§  Grease dhokla pot with oil.

§  Just before steaming add the eno fruit salt in a dhokla mixture and mix well.

§  Pour the mixture in the greased dhokla pot.

§  Now steam cook for 10-15 mins on medium flame.

§  After cooling, cut the dhokla in desired  pieces.

For Tempering:

·         Mix Sugar in half cup water and add lemon juice.

·         Heat the oil in a pan, add the mustard seeds and when they crackle, add the green chilli, asafoetida and curry leaves.

·         Now add the mixture of sugar and water and boil it.

·         Put this tempering material on the dhokla with the help of spoon.

·         Garnish with green coriander leaves and serve with green chutney.


Always use your hands while mixing the batter to avoid  lumps of the besan.
