Ingredients (for 4 servings)


  • 2 ltrs full cream milk
  • 1 cup sugar
  • 1/2 tsp cardamom (elaichi) powder
  • 2 spoon chopped almonds and pistachio
  • 6-7 strands of saffron


Method (How to make Basundi)


  • Bring the milk to a boil in a broad and heavy bottom pan.
  • Reduce the flame and cook on a slow flame till the volume is reduced to half, for approximately 1 hour, while stirring occasionally.
  • Add the sugar and cook on a slow flame for approximately 30 minutes or till the milk thickens like rabdi.
  • Add the cardamom powder and saffron and cook on a slow flame for another 10-15 minutes.
  • Garnish with chopped pistachio and almond serve warm or chilled.
