Muglai Mix Vegetable

Ingredients (3-4 servings)

2 cups chopped and boiled mixed vegetables (cauliflower, carrot,corn, peas, french beans)

1/2 cup onion cubes

1/2 tsp turmeric powder

1/2 tsp chilli powder

1 tsp coriander powder

3/4 cup fresh tomato purée

1 tsp garam masala

2 tbsp fresh cream

4 tbsp oil

salt to taste

2 tbsp chopped coriander (for garnishing)

To be ground into a paste

1 cup chopped onions

3-4 cloves of garlic

Method (how to make mix vegetable curry)

Heat 1 tablespoon of oil in a pan and sauté the onion cubes till light brown and translucent. Remove and keep aside.

Add the remaining oil to the same pan and fry the prepared paste in it till it turns golden brown.

Add the turmeric powder, chilli powder, coriander powder and salt. Sprinkle 2 tablespoons water and fry the masala mixture for a few more minutes.

Add tomato purée and cook till the mixture leaves oil.

Add the vegetables, sauted onions and ½ cup of water. Mix well and cover the pan for 3-4 minuts with lid and cook.

Remove the lid, mix the garam masala and cream. Switch off the stove.

Garnish with fresh chopped coriander leaves.

Serve hot with chapati.
