Kashmeeri Dum Alu


10-12 small Aloo (Baby Potatoes)

Oil for deep-frying

1 large Onion (finely chopped)

4 tbsp Fresh tomato puree

1 cup fresh curd

1tsp garam masala powder

4 cloves

4 bay leaves

1/2 tsp black peppercorns

2-3 green cardamoms

1 big cardamom

1piece cinnamon stick

Salt as per taste

Oil 2 tbls

Ingrdients for Paste

1 large onion (chopped)

10 clove garlic

1” peice ginger

6black peppercorns

1 tsp poppy seeds

1 tbsp coriander seeds

1 tsp cumin seeds

2 dry kashmeeri red chilies

1 tsp turmeric powder

Method(How to make Kashmeeri Dum Aloo)

Mix all ingrediants and make fine paste

Wash and prick the potatoes with a fork and soak in salted water for 1/2 hrs.

Now heat the oil in a deep pan for deepfrying

Pat dry the soaked potatoes and fry them in medium flame until they turns golden in color, Drain and set aside.

Heat oil in a deep pan and add all whole spices on it along with chopped onions and cook until onion turn golden.

Now add the grind paste and cook few minutes add tomato puree, curd and saltand cook till oil seperate.

Add the fried aloo and 2 cup hot water and cook on low heat for 5 minutes.

Now sprinkle garam masala and cook for few more minutes.

Garnish with fresh chopped coriander and serve hot with chapati or rice.
