Baigan Alu Badi ki Sabji

Ingredients (for 2-3 servings)
1 Baigan, cut into 1" cubes
1Alu, peeled and cubed
1/4 cup, cubed radish
(mooli)

1/2 cup moong dal badi
1 tomato, chopped
2 cloves garlic
1" ginger

1 greeh chilly
A pinch of Hing (Asafoetida)
1 tbsp
yellow mustard paste
1
/2 tsp cumin (jeera)

1/2 tsp cumin powder

1 tsp coriander powder

1/2 tsp turmeric powder

1/2 tsp red chilli powder
Salt to taste
2 tbls Oil
Fresh chopped coriander for garnish

Method (How to make baigan alu badi ki sabji)

Grind the garlic, green chilly and ginger coarsely.

Fill a large bowl with cold water and soak the eggplant cubes in it.
Heat about 1 tbsp oil in a wok and fry the Badi's till golden. Remove and keep aside.

In the same pan, add the remining oil.

When the oil heats add hing, jeera and ginger-garlic paste.

Cook for a minute and then add the potato, eggplants. Cook for 5 minutes, stirring occasionally. then add turmeric powder, salt, red chilli powder, cumin powder and coriander powder. Mix well, cover and cook for about 5 minutes. Add Radish and Tomato, mix well and cover the lid for another 5 minutes. Add one cup water, mustard paste, fried badi and cook till done. Remove from the heat.

Garnish with chopped coriander and serve hot with steamed rice or chapati.
