Bengali Baigan Bhaja - Fry Brinjals

Ingredients

4-5 Medium Size Brinjals

2 tsp Turmeric Powder (haldi)

1 tsp salt

1/2 Red Chilli Ppowder(4)

Mustard oil for frying

Method

Wash and cut the brinjals in round pieces.

Apply salt chilly powder and turmeric powder over it and keep it aside for 1 hour.

Now heat oil in wok Fry the the brinjals peices on medium flame until they get soft.

Now take off from the pan and place the peices on paper towel to absorb the extra oil.

Baigan bhaja is ready.

Serve hot with khichdi or rice.
